Recipe: Creamy Low-Carb Jarlsberg Brussels Sprouts

Do you love Brussels Sprouts? Do you *also* love smothering them with sumptuous, rich, and delicious cheese sauce? Say no more, I've got you.

I created this cheese sauce from a only a few ingredients, in the name of keeping it simple (I'm all about simple!)

The end result! Thank me later...

Ingredients:

1/3 cup of Jarlsberg

1/3 cup of Boursin

1/2 teaspoon of Extra Virgin Olive Oil

1 tablespoon of Ghee (or butter)

1 teaspoon of minced garlic

Pinch of pepper (optional)

Tips:

- Add as much oil as you like for optimal fat levels, and your own personal macros.

- Bake the sprouts with cheese sauce in the oven for 10-15 minutes at 175 Celsius (350 Fahrenheit), then bump up the temperature to 200 Celsius (390-392 Fahrenheit) for 5 minutes to brown the cheese, creating that tantalizing "golden" look with some extra crisp.

1. Preheat your oven to 175 Celsius (350 Farenheit). Chop the ends off of your sprouts (after you wash them, of course! - sprouts tend to be dirty little buggers), and remove/chop any brown parts.

2. Boil your sprouts for 5 minutes, to get some moisture into them. I like to do this because I prefer moisture than dryness, but it's entirely optional.

3. Melt the Boursin in a microwave safe glass bowl, or over your stove. Combine ghee, minced garlic, olive oil, and a pinch of pepper. Stir well with a whisk.

4. Add your Jarlsberg (don't add it to your Boursin first, or it'll get clumpy - womp womp).

5. After you've mixed everything together and it's meltier than a popsicle on the 4th of July... go ahead and pour that allllllllllll over your brussel sprouts in a non-stick oven pan.

6. Bake the sprouts with cheese sauce in the oven for 10-15 minutes at 175 Celsius (350 Fahrenheit), then bump up the temperature to 200 Celsius (390-392 Fahrenheit) for 5 minutes to brown the cheese, creating that tantalizing "golden" look with some extra crisp. Behold, as they burst from the oven in all of their cheesy, delicious glory!

VOILA! Brussels sprouts beauty, au gratin!

I had some rotisserie chicken with avocado mayo (which I swear is the best mayo for keto) to go along with my brussels sprouts... YUM! Bon appetit!
